Leftovers from Thanksgiving? Make it into a healthy corn chowder!

Ingredients:

  • Olive Oil

  • Minced garlic

  • Onion

  • Leftover turkey

  • 2-3 cans of sweet corn

  • Any kind of potatoes - I use small circular potatoes and I cut them in half

  • Almond Milk

  • Chicken or Vegetable broth

  • Pepper and salt for taste

SUPER SIMPLE RECIPE!

  1. Heat up a large pot with olive oil and minced garlic. Add in one onion. Sautee for 3-4 minutes.

  2. Add potatoes, cook until potatoes are soft. Then add sweet corn and mix evenly for 3-4 minutes. Add shredded turkey.

  3. Add both almond milk and chicken (or veggie) broth to the pot. Let simmer for 10 minutes.

  4. I personally added some pepper and chili flakes for flavor. Because I’m using almond milk instead of milk, it has less creamy consistency but still chock full of flavor!
